Looks like another great meal! Have you ever tried putting parsnips in your mashed potatoes? My wife and I tried it a few weeks ago and it's delicious. I don't have the recipe as we were eating at a restaurant, but it's something that I'm going to try to recreate soon. Anyhow, there's my tip for the day.

Yes parsnips are excellent in mashed potatoes! We have also been known to sneak in some turnips, or even to stir in greens like kale! We're big potato eaters around here, and it's nice to mix it up sometimes. Thanks for the tip @themanwithnoname!
