I am totally hooked on black bean burritos lately! It all started when we broke down and tried a restaurant called Mucho Burrito. We very rarely dine out so it was a bit daunting at first, would we find anything we can eat? Right away I was intrigued by their selection of vegan options and put together burritos and burrito bowls for myself and the kids.
Since then, I've been craving them like crazy!
Luckily I grew about 10,000 black beans last year and still have some of the yummy bastards in the pantry! Nothing like black beans from scratch that you actually grew yourself!
I've been making these for a while now and they're so simple and delicious!!!
Ingredients are as follows; rice, black beans, corn, bell peppers; green and red, tomatoes, salsa and cheese.
You can easily switch up the ingredients, add spicy peppers, onions, veggie crumbles, avocado, tempeh, chickpeas or extra beans, the sky's the limit :)
For cheese, I use Follow Your Heart shredded cheddar for my burritos, it sets it off perfectly!
I throw it all in an organic wrap and roll it up, then bake it in the oven for a little bit, just enough to seal it on the bottom and melt the cheese :)
Such a simple food but so amazing! Give them a try!
