Baked Spaghetti Frittata With Broccoli Rabe And Smoked Mozzarella

6.00 eggseggs
8.00 ounces mozzarellamozzarella
0.75 cups pecorino romano
6.00 servings pepperpepper
6.00 servings saltsalt
12.00 ounces spaghettispaghetti

Cooking Instructions


Step 1

Preheat the oven to 350°F. Bring a large pot of salted water to a boil.Oil a shallow 2-quart baking dish.


Step 2

Add the broccoli rabe to the boiling water and cook for 5 to 8 minutes, until almost tender.


Step 3

Remove with a strainer; leave the water boiling.


Step 4

Let the broccoli rabe cool slightly, then chop it into bite-size pieces.


Step 5

Add the pasta to the boiling water, stir well, and cook, stirring often, until almost but not quite al dente.


Step 6

Drain.Meanwhile, in a large bowl, beat the eggs with 1/2 cup of the grated cheese, a pinch of salt, and pepper to taste.


Step 7

Add the pasta and toss well.


Step 8

Add the broccoli rabe and toss again.


Step 9

Pour half of the mixture into the baking dish.


Step 10

Place the mozzarella on top.


Step 11

Add the remaining pasta. Sprinkle with the remaining 1/4 cup grated cheese.


Step 12
