This is a shortbread-like dessert, more or less is like a biscuit, made of almonds. It is customary in my country especially during Christmas period. It is a nice treat; your homes are filled with buttery scents and the Christmas table with confectioner’s sugar!
Unlike melomakarona, which I presented to you the other day, this is a less time consuming dessert, nonetheless it has its special place in the festive table. As the internet advised me this dessert comes from Iran, nevertheless can be found in the Greek cuisine since the early 20th century as it was brought here by the Greek refuges of Asia Minor post the Asian Minor war of 1922.
Ingredients: 1 kgr of butter, 0.3gr of vanilla extract, 1/2kgr almonds (peeled, roasted in the oven and then grinded in big pieces), 1 small tbsp. of baking powder, 2-3 tbsp. of sugar, 1 egg, 1 espresso cup of brandy, 800gr of all-purpose flour, confectioner’s sugar (quantity depending on your tastes, you might as well skip this part)
In a deep bowl you cream the butter, the sugar, the egg, the vanilla and the brandy. You add the baking powder and then little by little you add the flour. At first you use a mixer, but then you knead with your hands. You want the pastry to become soft and easy to mold. In the end you add the almonds and keep kneading all the ingredients together.
You shape the biscuits in whichever shape you like. I made round biscuits. You place them on a tray (few at a time) and put them in a pre-heated oven for 15-20’ in 160C. They must become pink on the outside.
You take them out of the oven and while still warm you sprinkle confectioner’s sugar. I put a lot, but it’s totally up to you. As said before, you can skip this step if you like.
The above ingredients make around 75-80 pieces of Kourambiedes.
