This is a recipe that comes from Southern Portugal, Alentejo. It's a sweet made out of wheat flour, white wine and lard.
Ingredients
- 300 grams of flour
- 125 grams of lard
- 1 egg
- 1/2 a shot cup of wine spirit (aguardente)
- 1 teaspoon of cinnamon
- 1 teaspoon of baking powder
- 1 orange (juice)
- oil (to fry)
- sugar and cinnamon to sprinkle
Directions
Start by melting the lard in the microwave.
Mix in a bowl the wheat flour, the cinnamon and the baking powder.
Make a hole in the center and gently pour the boiling lard in the mixture.
Mix carefully with by hand.
Next warm up the white wine and pour it in the flour mixture.
Mix well and add the wine spirit, the orange juice and the egg.
Knead the dough until it becomes elastic and doesn't stick to the hand.
It might be needed a little bit more flour to achieve the right consistency.
Let it rest for a few minutes.
Extend the dough in a slightly floured table with a rolling pin and cut it in circles with a small hole on the inside. (Just like a doughnut)
Fry the dough in hot oil. Sprinkle with a mixture of sugar and cinnamon.
