The Spicy Indian #23 - Buttermilk (Salted Chaas)

How have you all been?

It's been a long time since i posted about my recipes. So today i decided to put one of them. Thats Chaas. Here is a instant recipe of Chaas. Hope you will like it and do comment your feedback hows it. :)

Cuisine: Indian
Preparation Time: 5 mins
Cooking Time: 1 mins
Total Time: 6 mins

INGREDIENTS

Fresh whisked curds- 2 cups
Cumin powder- 1 tbsp
Black salt- 1/2 tbsp
Ginger-green chili paste- 1/2 tbsp
Cumin- 1/4 tbsp
Asafoetida- a pinch
Oil- 1 tbsp
Salt to taste

For The Garnish


Mint leaves- 2-3

Take curds, ginger-green chili paste, cumin powder, black salt and salt in a bowl and mix it well.

Now add 3 cups of chilled water in the bowl and whisk it well. Keep it aside.

Heat 1 tablespoon oil in a non-stick pan and add the cumin in it. When the cumin crackle, add a pinch of asafoetida and pour this tempering mixture over the buttermilk.

Serve the buttermilk chilled and garnished with coriander.

Lassi and chaas both are the same thing. Thats just a name difference in different regions. 😊

Well, it has been a while we tried it after moving to states here. Though both me and my wife miss it mostly as the whole milk curd does not taste similar to what we are used to back in India. Anyways, thanks for sharing the recipe.

I for some reason don’t think I would like this. But I’m willing to try. Is this like a dessert? When would you drink it? Is it sweet or savory?

savoury drink it is, helps with food digestion and keeps you cool in summers.

This recipe is a salty one but you can try this as a sweet too. You can add sugar istead of all these spices. But if you want to taste a real one you should come here in India. As i can see you are a great food lover. You should definitely come here. 😊

I haven't tried any Indian food, but by the looks of it, it's delicious i hope i can eat one someday.

there is an older and traditional method,

the water mixing method is used for packaged buttermilk mainly cause they separate fat from the milk in an early phase.

churn the curd, butter will separate at top which will later be used to make ghee in india, rest is chaas or mattha traditionally which contains negligible fat and a good drink for summers.

I know the traditional one too. My grandma use to do it. But its really time taking and these days nobody have enough time and such equipments, hope you know for which equipments i am talking about. Thats why i put a simple one method.

Umm you can find it at any indian grocery store. These are common ingredients.

Yep i put here an instant recipe because the traditional one took lot of time and different kinds of equipments thats not so easy to get. But this is a alternate of traditional one with same taste. 😊

Add a pinch of black pepper powder and chaat masala. It will enhance its taste.
