I never thought I'd buy an air fryer, but I did, and now it is time to test it for all sorts of purposes. So, I love sweet potato fries, but it is often a challenge to get them crispy and nice.
I have learned how to do it as I fry them in oil, using corn starch at the top of the dried sweet potatoes, before putting them in the hot oil. But, what after making sweet potato fries in the air fryer?

First attempt - some oil and the sweet potatoes.
I have had two attempts today. The first one I just sliced the sweet potato into smaller pieces, left it in water for an hour, then I dried the potatoes, added a half tablespoon of oil to them, and added them to the air fryer for 20-25 minutes at 200 Celsius. I didn't pack it very full, and I shaked the potatoes a few times in the process for it to be fried from all angles.
What was the end result? I got tasty sweet potatoes, but not at all that crispy on the outside... at least not as I prefer then. I can easily eat them like this, after all, I love the taste of sweet potatoes, but it was not the one I love. I added salt as the sweet potatoes were finished.
Second attempt - with corn starch, no oil.
My second attempt was using the same technique (soaking them in water for an hour), then drying them, and then I added some corn starch to the top, together with some pepper, but this time I skipped the oil entirely. Now I added it to the air fryer and after ten minutes shaked it a bit, and then placed it back.

Now, I thought the second option would be better, but it had such a dry feeling on the outside, that I actually think I liked the first option better. And the crispiness lacked from both, so I must admit that after two attempts, I am still out looking for the ideal option to make really nice and tasty crispy sweet potato fries in my air fryer.
