Healthy & vegan muffins Recipe:

RECIPE:
165 g raspberries
140 grated pumpkin (raw)
2 tsp grated ginger
200 g spelt flour
60 g coconut blossom sugar
1 1/2 tsp baking powder
Pinch of vanilla
1 cup oat milk or other no-dairy milk
60 g oats

Directions:
Preheat the oven to 180C.
Mix all the dry ingredients well and then add all the wet ingredients (except the raspberries.)
Blend until smooth and than add the raspberries by folding them into the dough.
Put 1-2 tbsp from the dough for one muffin in a muffin tin.
Put the tin in the middle of the oven and bake for about 45 minutes.
Take it out and let it cool down before eating😉(if you can wait)😂😋 Enjoy with your favourite hot-drink and if you wish, with some strawberry cream🍓😍
