What I Ate Today for Healthy Weight-loss

Today I thought that I would take you guys along on a full day of eating. Now today turned out to be a very stressful day for me, it was a challenging work day and on these days I would usually opt for unhealthy foods. I'm not sure if this would make sense to others, but whenever I'm feeling stressed, sad, or generally bad about myself, I will purposefully make awful food choices because I want to physically feel as bad as I emotionally feel. Since starting to concentrate more on my health, I've tried to change this behavior pattern as much as I can. I'm trying to be really forgiving with myself and remind myself that I don't have to be perfect, that any ounce of improvement is progress towards a healthier life. Now onto the food!

Last night I did not get much, I was up earlier than usually and while i was tired, this was a great opportunity to make my breakfast and have extra time to sit down and enjoy it. I had oatmeal with peanut butter, blueberries, and a healthy pour of maple syrup.

For lunch, I had the previous nights left overs, which was whole grain rice on a bed of spinach topped with a tofu saute that was made up or garlic, onions, red peppers, mushrooms, extra firm pressed tofu, all cooked with some soy sauce, a hint of liquid smoke, and a dash of maple syrup. It was also topped with some roasted peanuts for added texture and protein. (Picture shown of the dinner from the previous night nicely plated instead of the messy tupperware that I took to work lol)

After a really stressful day at work, I didn't really want to fuss with dinner to much so I kept it simple. I cut up a few potatoes and tossed them with some salt, pepper, garlic powder, onion powder, chili powder, and cumin. I put them in a 400 degree oven (Fahrenheit), on a sil pad so they wouldn't stick, for roughly 35 minutes. I placed them on some butter lettuce leafs to get some added greens and topped it all with some sriracha.

Today was a hard day mentally and emotionally, but now I'm at the tail end of this day and I'm focusing on some self care practices that will help me wind down for a restful night of sleep. I'll write a blog post soon on what I do on days when I'm physically and mentally having a hard time, but for now I hope you're all doing well and I shall see you very soon!
