Ingredients
1000g salmon fillet, skin on, bones removed
2 oranges
2 tablespoons coarse kosher salt
1 tablespoon sugar
Directions
Prep: 15 mins
Ready in: 24 hours (to cure salmon)
Remove pin bones from the fillet. Do not take the skin off just yet.
Cut orange into 5mm thick slices.
Rub sugar and salt into the fish.
Put the salmon (skin side down) into a parchment paper lined bowl. Cover it with orange slices.
Wrap parchment paper over the salmon and put a lid on the bowl. Put the bowl in the fridge and leave it there for 24 hours.
Next day get the bowl out the fridge. Throw away orange slices and drain the juice.
Remove the skin and cut the fish into thin slices. Serve with French bread.

Thank you @jamesburke! It is also a useful survivalist recipe! Imagine you're lost on an uninhabited oil rig deep in ocean. All you have is fish, sea salt, some sugar and an orange. Also you can not make fire because of...idk...let's say oil spill and fire hazard. In an unlikely situation like that, this recipe might really save your life! I'm kidding :)
