"Arroz con Leche" - Rice Pudding | Step by Step Recipe

Hello my lovely friends, today I am sharing with you one of my fathers favorite dessert, Rice Pudding or as we call it in Latin America "Arroz con Leche", this dessert is really simple and delicious , some people like to eat it hot , others cold , personally I like to let this dessert chill completely before eating it. Lets go with the recipe.

Arroz con Leche | Servings : 4

Ingredients:

  • 3 Cups of Evaporated Milk
  • 2 Cups of Rice
  • 1.5 Cups of White Sugar
  • 2 Egg yolks
  • Peel of half orange
  • 3 Cloves
  • 2 Cinnamon Sticks
  • 1 Cup of Raisins
  • 1 Teaspoon of Cinnamon powder
  • 1 Tablespoon of Vanilla extract
  • Pinch of Salt

Steps:

  • Bring to a Boil the orange peel , let it boil for 1 min then discard water and boil it again whit more water, repeat the same process for 3 times, then reserve.

  • Rinse your rice for about 2 min , then cook it with 3 cups of water, Cloves , Cinnamon sticks, the Orange peel and a pinch of salt for 25 min.

  • Once its cooked remove , cloves, cinnamon sticks, orange peel and add sugar, Vanilla extract and milk, give it a stir and let it cook for 5 to 7 min in a medium / low heat.

  • In a bowl beat some egg yolks and integrate with some of the Milk and rice mix, then add the yolks to the "Arroz con Leche" and turn the heat off but keep stirring for at least 3 min.

  • Add Risings and enjoy!

That is it guys, you can eat this dessert hot or cold is up to you , it will last on your fridge for 3 days , but since is so tasty wont last more than 24 hours, you can use any kind of rice you want , you can even use Quinoa instead of rice ! , we boil the orange peel to remove the bitterness of it , if you want to do it with out it , its OK but keep in mind that the Orange peel adds flavor and Aroma to the dessert , it makes it really tasty.
