Ingredients:

Eggplant — 2 PCs
Onion — 1 piece
Garlic — 3 cloves
Tomato — 1 piece
Chicken egg — 2 PCs
Olive oil — 30 g
Cheese — 100 g
Greens — to taste

Preparation:

  1. The eggplant is cut into two parts and neatly cut out the middle.
  2. Onion finely chop, garlic skip through the press and fry in olive oil
  3. The flesh of the aubergine, finely chop and place in the pan. Simmer about three minutes. Remove from the heat.
  4. Tomato and hard-boiled eggs sliced. Then add to the stuffing, there also send a bit of greenery and 50 grams. grated cheese. All mix, salt, pepper, season to taste.
  5. Fill with stuffing halves of the eggplant.
  6. Sprinkle with grated cheese and send baked in the oven for 20-30 minutes.
    Top cover with foil for 15 minutes to not burn the cheese.
