Servings: 8

Ingredients:
2 cups of quinoa
1 cup green peas
1 cup of snap peas
1/4 cup chopped mint
three tablespoons of olive oil
1/2 lemon
salt
pepper
Steps:
Cook quinoa according to brand instructions (we use sprouted quinoa)
While the quinoa is cooking, boil green peas and snap peas for 15 seconds, drain and place in a bowl
In a large bowl, mix the cooked quinoa, chopped mint, salt and pepper to taste, olive oil, juice of half a lemon and the cooked peas
Optional: serve with fresh chopped chilis for an extra kick!

But jalmudi can be done under 1$. It seems cost of living is more in states.
