Whole Mind Cooking: Create a Tasty Indian Masala Soup

Looking for some cold weather meal inspiration? This soup will keep you warm and satisfied for hours!

Cook time: 30 min

Servings: 4-6

Cost: $9.50

Ingredients:

4 cups broth (vegetable or bone)
1/2 cup coconut milk
1/2 diced onion
1 tablespoon curry powder
1/2 tablespoon garam masala
2 teaspoons cumin
2 teaspoons of ground coriander
1/2 lemon
1 large chopped sweet potato
1 large chopped yellow squash
1 cup chopped snap peas
2 heaped tablespoons of tomato paste
salt
pepper

Steps:

  1. Over medium-low heat, add broth to pot with coconut milk, diced onion, curry powder, garam masala, cumin, ground coriander and salt and pepper to taste

  2. Mix well, adding in juice of 1/2 lemon, sweet potato, yellow squash, snap peas and tomato paste

  3. Bring to boil, then cook over low heat for 20 minutes

  4. Serve as is or blended with fresh cilantro and a squeeze of lemon juice
