These "burgers" are so easy to make and full of vegetables! You can use your patty of choice (including vegan or vegetarian burger patties). In this recipe we used a turkey burger.

Ingredients:
1 large sweet potato
olive oil or coconut oil
burger patty of choice (vegan or meat patty)
salt
Preheat oven to 400 F (200 C)
Slice large sweet potato into 2 thick, round “burger buns”, drizzle with olive oil or coconut oil and salt to taste, and bake for 15 minutes (or until soft)
While the sweet potato is cooking, cook burger patty
Once sweet potato has cooked, serve with toppings of choice
