This recipe was inspired by my childhood in South Africa (we call them "crunchies"). They are incredibly tasty and filling, perfect for breakfast on the go, hiking, or dessert!

Cooking time: 35 minutes
Servings: 16
Cost: $13.70 ($0.85 per serving)
Ingredients:
1 cup shredded coconut
2 cups flour or cassava flour
1 3/4 cup oats
1 heaped teaspoon cinnamon
1/2 teaspoon salt
3/4 cup butter (or cocounut oil for vegans)
1 1/2 tablespoon coconut nectar (or honey or maple syrup)
1 cup coconut sugar or maple sugar
1 teaspoon baking soda
Steps:
Preheat oven to 160 C/ 325 F
In a bowl mix shredded coconut, flour (we use cassava flour), oats, cinnamon and salt
In a saucepan over low heat melt butter or coconut oil, coconut nectar (or honey or maple syrup), and coconut sugar or maple sugar
Once the sugar is dissolved add baking soda to the pot
Add the wet mixture to the flour and oats, and mix well with spatula or hands
Spread the mixture by hand over a greased or parchment lined tray, and bake for around 15 minutes, or until golden brown
Turn the oven to 150 C /300 F and bake for another 5 to 10 minutes
When the tray has cooled, slice into squares and serve!
