Whole Mind Cooking: Yummy Kale Salad

This kale salad is a staple in our home, and so easy to toss together (literally). Tessamae's Green Goddess dressing is incredibly delicious, but you can also make your own dressing if desired.

Cook time: 5 minutes

Servings: 4

Cost: $4.50 ($1.13 per person)

Ingredients:

1 bunch kale
1 handful of shredde carrots and shredded red cabbage
1/4 cup of Tessamae’s Green Goddess dressing
1 tablespoon parmesan cheese (optional)
1 heaped tablespoon nutritional yeast
salt
pepper

Steps:

  1. Wash and chop kale, including stems, shredded carrots and shredded red cabbage.

  2. Add in Tessamae’s Green Goddess dressing, parmesan, nutritional yeast and salt and pepper to taste. Toss the salad and leave to set for 5 minutes.

  3. Serve as a main meal or side dish.
