This is my recipe for Creamy Pumkin Soup.
I made this for dinner this evening and its delcious!
Serves 6-10
Ingredients:
Pumkin
Half cup yellow split peas
2-3 Potatoes
Medium sweet potatoe
2 onions
2 carrots
Half cup of milk
50g Butter (or use cream)
2 or more litres water
Tspn diced or crushed Corriander leaves or seeds
Salt and pepper
Step 1.
Place an extra large pot on the stove and add 1 ltre of water and split peas and bring to a simmer for 20 min
Step 2.
Peel and dice carrots smaller and add to broth (add another litre of water) let simmer for 20 minutes.
Step 3.
Prepare your veg by roughly chopping your pumkin, potatoes, sweet potatoe and oinions

Step 4.
Add to broth and let simmer on a very low heat for 1-2 hours. (May need to add a little bit more water)
Step 5.
When it has been long enough the carrot will be mushy ... Its best to wait till the mix cools a little before attempting to handle and blend. But still nice and warm.
Step 6.
Now is the time to get out your wizzing device! And carefully blend your ingrediants into a thick runny soup.

Step 7.
Add butter or cream and stir
Step 8.
Add milk (if mix is too runny simmer on low heat stiring ccasionally and add cream instead)
Step 9
SERVE! :)
