Homemade Mango Pudding🍮 自制芒果布丁🍮

I bought some mangos in Costco. I made this pudding since there are too many mangos and I was craving for coconut milk as well.

前阵子在Costco买了些芒果。然而吃的速度赶不上芒果的变化,再加上最近又特别想喝椰奶,我就做了这个布丁。

Ingredients原料
Mango 1芒果 1个
Coconut Milk 200ml椰浆 200ml
Milk 250ml牛奶 250ml
Water 200-500ml*水 200~500ml*
Gelatin 2 envelopes吉利丁粉 2袋
Sugar
Chia Seeds (optional)奇亚籽(可选)

*I used 500ml water this time and I thought it was too much. I’ll try less water, maybe 200ml next time.
I used Kara natural coconut milk and Krox original gelatin unflavored if anyone is interested to know.

*这次我用了500毫升水,觉得做出来布丁椰奶味太淡了。下次我会减少水量,200毫升可能比较好,或者不加水。
我用了Kara椰浆和Krox吉利丁粉。为了味道的浓郁度,请不要用椰奶代替椰浆。

Method

  1. Dice the mango
  2. Dissolve gelatin in cold water
  3. Dissolve sugar in boiling water in a saucepan.
  4. Turn down the heat and pour coconut milk and milk into the pan. Stir and add dissolved gelatin prepared in step 2.
  5. Pour the coconut milk into containers and add diced mango (or diced strawberry) . I added some chia seeds as well.
  6. If you really don't want to wait for too long, you can freeze the containers for 40min - 1hr depend on how large the container is.
  7. Otherwise, put the containers in the fridge cabinet and wait for 3-4 hours.

做法:

  1. 芒果切丁
  2. 吉利丁粉在冷水中泡开
  3. 水煮开放糖至融化
  4. 调小火,加入椰浆和牛奶搅拌均匀,加入准备好的吉利丁
  5. 把煮好的椰浆倒入饭盒、碗等容器中,均匀撒入芒果丁(或者草莓丁蓝莓都行)。因为家里有很大一包奇亚籽,我也顺便撒了一些。
  6. 着急吃的话,放冰箱冷冻室40分钟至一小时(小容器40分钟应该够了,大容器可能要一小时。40分钟的时候拿出来晃一晃,还能流动的话就再放一会儿)
  7. 不着急吃的话,就在冰箱冷藏室放3-4小时
