Ingredients for chocolate muffins
300 gr. wheat flour
80 gr. pure cocoa, sugar-free
1 and ½ cdita. chemical yeast
¼ cdita Salt
250 gr. sugar
100 gr. Butter
250 ml. whole milk
The juice of ½ lemon
2 eggs
150 gr. chocolate 70% cocoa

Preparation of chocolate muffins
On the one hand we mix the solid ingredients, the flour, the cocoa, the yeast and the salt. We reserve In a bowl we mix the whole milk with the juice of half a lemon. Let stand for 15 minutes, so we will get a homemade buttermilk.
We melted the butter in the microwave and reserved it. In a bowl we beat the eggs with the sugar. Mix well until you create a frothy cream. We add the melted butter and the buttermilk. We mix well.
We incorporate the dry ingredients and, with some rods we mix until integrating. It is not necessary that we work too much the mixture, it is only a matter of integrating the solids with the liquids.
With a knife we ​​cut the chocolate 70% cocoa into small cubes. It does not matter if they remain irregular or of different sizes. We remove ¼ of the chocolate and the rest we add it to the muffin dough. We remove to distribute them throughout the mass.
Baking and final presentation of chocolate muffins
We light the oven to preheat it at 190º C and while filling the capsules with the mixture, always leaving 1/3 of the free height.
We have to take into account that the mass will rise, so it is necessary that we leave a free space, without filling.
We distribute the chopped chocolate that we have set aside on all the muffins and bake for 20 minutes at 190ºC with heat above and below and without fan.
Remove the tray of muffins from the oven and place them on a rack until they are completely cooled.
The perfect thing is that we take them freshly made. Once they are warm, the chocolate chips will be melted in each bite. Imagine these muffins accompanying a glass of milk can be a snack or a yummy breakfast.
If you have any left for the next day, do not worry if they become a little hard. We can put them for 5 or 6 seconds in the micro and we will enjoy again its flavor and texture
