Steemit Food Challenge #2 - Italian Style Chicken Mushroom Spaghetti Squash

Hey everyone,

I have finally decided to participate in this challenge
I love to cook and I like to cook healthy. For this challenge I present to you a different approach to Italian cuisine.
Even though this dish doesn't contain pasta it still look like it does!
This recipe is great for anyone who is trying to cut down on heavy carbs, gluten or just want to try something new. Its super easy and super nutritious!

Chicken Mushroom Spaghetti Squash

You will need ( for 2-3 ppl)

  • 3 chicken breast halfs
  • medium size spaghetti squash
  • 4 tomatoes
  • baby spinach 4-6 oz
  • mushrooms ( any kind really) 4oz
  • 4 cheese Italian Mix
  • Italian dressing & marinade
  • 1 small onion
  • fresh basil
  • your favorite oil for cooking
  • salt & pepper
  • some good music for the background ;P

Preheat oven to 375 F .Cut chicken into smaller pieces, place them into deep bowl and poor Italian marinade over to cover fully. Send this bowl into the fridge.

Cut summer squash in 2 halfs, scoop our seeds and place them cut side down on a tray. Add half glass of water and send it to the oven for 30-35 min or until its soft.

Cut an "X" on 2 tomatoes and deep them into bowling water for a minute or until you see the skin is starting to peel off. Rinse under cold water and set aside to cool down.

On a large pan heat up some oil and sauté on low heat chopped onion until its lightly brown

Chopp down fresh tomatoes and mushrooms and add them to the pan. Cook for another 5 min

Once some juice is created add chopped spinach and cooked tomatoes. Let it sauté on low for another 5 min

Your squash should be ready by now. It should be soft and easily be pierced by knife. Let it cool down and pull strands off the walls using a fork . Save the shell, we are going to use it as a plate :)

Add cheese, salt and pepper into your sause, stir it all together. if you like your cause thicker you can add a can of tomato paste. I personally try to stay away from any canned ingredients and cook with fresh components.

Cook chicken they way you like it : pan fried, backed or grilled.
In a saved squash halves place spaghetti, mushroom sauce, chicken and top it with fresh basil!

Exotic dish!

Its not really actually. you can find spaghetti squash at any grocery store =)
I just tried to be creative with plating )
