Linguini Pasta with Scallop sauce! I just have to do it now!

I have been so busy these past few weeks. Having to enjoy each moment with my sons and my parents during ECQ, I need to make sure that there's food on the table that is good for them. Been tied up with my eldest sons' nourishment needs that I somehow felt guilty that I might be neglecting my youngest son. Last night, I asked him if he wants pasta and scallops for today's lunch and he said yes. (Not thinking that I never cooked scallops before).

It's the same story why I'm writing it now, I have been wanting to write something on social media, share some experiences, thoughts and learn new things thru writing. But oops! I forgot I'm not a writer. Good thing I have dear friends encouraging me to write anything and experience it. ( Special thanks to my friend @juanvegetarian who invited me on this platform). So here's the first! (Please be patient)

While having my late breakfast, still thinking about how I'm going to cook my Linguini pasta, I browsed some tips on YouTube and it looked really easy. I'm not really a good cook but somehow I can make a one-time hit on some of my cooking. I don't use measuring tools (I usually tell my family, if liked the dish, eat it now and enjoy it coz I can't promise I can do it again in the same taste). Going back to my story, opened the ref and took the scallops, my ref is full of green leafy vegetables at this time since it is required in my eldest son's diet, I grabbed some fresh basil and spinach to add some greens to my pasta.

Prepared my Linguini ( normally it takes 8 minutes to cook in boiling water then make sure that it's aldente).
On a pan, heat the olive oil (about 2 rounds around the pan), toss the minced garlic and white onion, and let it stay until the garlic is a bit brown and the onion is transparent in color. Sautee the scallops add a pinch of salt and pepper then pour ed a glass of chicken broth then cover. Once it boils, I throw in the greens (I cut them into strips so their flavor will not be too strong for my son). Just wait for a few seconds and I put the linguini pasta and mixed them well until the sauce sips on the pasta. Add some fresh basil on top for the looks and that's it!

So, here it is, my first! First time cooking Linguini with Scallops! First time to write here on Hive as well. I just hope that you also enjoyed reading as much as my family enjoyed my pasta. Really nervous to post this but let's see how this goes.
