I was in the mood for something sweet but not too sweet as a small snack and to treat myself. So I went into the pantry to look at all the ingredients available for me to bake something.
Needless to say, there was not very much in the pantry. But then I remember an old cookie recipe that only takes three ingredients - Simple Peanut Butter Cookies.

It takes about 15 minutes to prepare and less than 15 minutes in the oven. Let them cool a little bit and you have a nice nutritious in less than an hour.
Ingredients
Here are the three ingredients that I used to bake the cookies. Any type of peanut butter will do even organic however with organic you will need to make sure you mix it well before measuring as some of the natural brands tend to have the oil separate a little while in storage.
I have always used Imperial Sugar but any brand will do for that as well but it does need to be granulated sugar. Some of the other kinds of sugar may work but some cook differently so if you are a good cook and know how to substitute ingredients in recipes by all means take the liberty to change it up, that is how new dishes are discovered.
The final ingredient is 1 large egg. The egg is used in the recipe to hold or bind the other two ingredients together.
List of Ingredients:
1 Cup Peanut Butter
3/4 Cup Granulated sugar
1 Large egg
Mix these three ingredients up very well until thoroughly combined.
Baking
Heat the oven to 350F degrees while you are preparing the cookie dough. I use a tablespoon to scoop the dough and then roll it into a ball with my hands. Once in a ball, I place on the cookie sheet in rolls.
As you can see the do not look like balls on the cookie sheet. I take a fork and press the ball down to about 1/4 inch thickness and then press the fork on the cookie again across the first impression resulting in the design you see in the photo.
Bake for 10 to 12 minutes. Depending on your altitude you may need to bake a little longer. The cookies will be soft after you remove them from the oven but will harden up as they cool.
I like softer cookies so usually cook only 10 minutes. The cookies from this recipe are nice and crumbly so you will need to make sure to be careful not to drop crumbs all over the place or you will not only need to do dishes after baking but also need to vacuum the floor after eating the cookies.
End Result
There are so many different ways to make Peanut Butter cookies but this is the simplest recipe that I know of. If you make them, let me know how they turn out.
