Ingredients:

1 lb of chicken, pork, beef, or a combination of these (cut into bite-sized pieces)
1/2 cup of vinegar
1/2 cup of soy sauce
6 cloves of garlic, minced
1 tsp of black peppercorns
1 bay leaf
1 medium onion, chopped
2 cups of water
1 tbsp of vegetable oil
Salt, to taste

Instructions:

  1. In a large bowl, combine the vinegar, soy sauce, garlic, black peppercorns, and bay leaf. Add the chicken, pork, or beef to the bowl and mix until the meat is well coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours.

  2. Heat the oil in a large pot or Dutch oven over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes.

  3. Add the marinated meat to the pot, along with any remaining marinade. Add the water and bring the mixture to a boil.

  4. Reduce the heat to low and simmer the adobo, covered, for 45 minutes to 1 hour, or until the meat is tender.

  5. Remove the cover and increase the heat to medium. Cook the adobo, stirring occasionally, until the liquid has been absorbed or evaporated, about 15 minutes.

  6. Season the adobo with salt to taste. Serve hot, garnished with green onions or cilantro, if desired.
