From Rooftop to Lunch Table

Today, I'm sharing a story that brings me immense joy - a journey from a tiny seed on my rooftop to a delicious Filipino lunch. For those who follow me, you know my love for cultivating fresh ingredients, and this time, the star of the show is the mighty eggplant!

Growing eggplants in pots, even on a limited rooftop like mine, has proven to be a delightful adventure. With a little sunlight, well-draining soil, and some tender care, these beauties thrived, rewarding me with plump, gorgeous eggplants. There's a satisfaction in nurturing life and witnessing its transformation into something delicious that simply can't be replicated at the store.

The possibilities for Filipino ginisa (stir-fry) are endless, and today, I opted for a simple yet flavorful combination. My homegrown eggplants took center stage, surrounded by a colorful cast of onions, garlic, tomatoes, and some green beans I had on hand. Filipino cuisine celebrates fresh, seasonal ingredients, and this dish perfectly embodied that spirit.

To complete this delightful lunch, I couldn't resist pairing the veggie stir-fry with a Filipino favorite - daing na bangus (milkfish). The salty and savory notes of the daing na bangus beautifully balanced the fresh flavors of the eggplant and other vegetables.

The end result? A soul-satisfying lunch that began with a seed planted in a pot high above the ground. It's a testament to the joy of cultivating your own food, no matter the space available.
