Filipino-Style Tacos
Ingredients:
For the Filling:
- 500g ground pork or beef
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup tomato sauce
- 1/4 cup soy sauce

Instructions:
Prepare the Filling:
- In a large skillet, heat a bit of cooking oil over medium heat.
- Sauté the chopped onion and minced garlic until translucent and fragrant.
- Add the ground pork or beef and cook until browned, breaking it up into smaller pieces with a spatula.
Season the Filling:
- Add the tomato sauce, soy sauce, brown sugar, black pepper, oregano, paprika, chili powder, and a pinch of salt.
- Stir well to combine all the flavors.
- Simmer the mixture over low-medium heat for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken.
Prepare the Toppings:
- While the filling is simmering, prepare your toppings by washing and chopping the lettuce, tomatoes, green onions, and red onions.
- Grate the cheddar cheese and slice the jalapenos if you're using them.
Fry the Taco Shells:
- In a separate pan, heat cooking oil for frying the tortillas.
- Carefully place each tortilla into the hot oil, shaping it into a taco shape as it fries.
- Cook until the tortillas are golden and crispy. Place them on paper towels to drain excess oil.
Assemble the Tacos:
Fill each taco shell with a generous amount of the meat filling.
Top with shredded lettuce, diced tomatoes, grated cheddar cheese, a dollop of sour cream or yogurt, and sliced green and red onions.
