Its raining all week here so there is a question on my mind.. how fast the mushrooms grow after a good rain?
Been roaming around the forest gathering mainly Boletus and Amanita ceaseria, so far those are the only ones I'm sure of.
The other night while I was browsing the internet I suddenly stumbled upon this photo on my feed:
Recognize these kind of mushroom because I have seen them in the forest, but never knew they were good quality edible mushroom, until that photo and some research after that.
Quickly made the connection that most Chinese restaurants cook with these mushrooms, and already know I like them!
Naturally I added this type of mushroom to my watch list. Next time I see it, I'm gonna pick it!
As I was walking after a heavy rain and almost empty bag of Boletus, I went to check out a new place I have never been, and suddenly:

They were everywhere around me!

So excited to see them, I quickly fill up the bag and head home to prepare them.

Must admit the preparation and cleaning process of this tiny mushroom is harder than bigger type mushrooms, keep that in mind..
Decided to boil them and put them in jars with some herbs, that way they keep their freshness and its a good salad.
boiling them for 30min with a lot of salt, few pepper corns, allspice and bay leafs
preparing the jars with some garlic and dill.
Strained the mushrooms from the water, discard the water.
Fill the jars with mushrooms and top it with sunflower oil.
Close the lids and put them in the fridge. On the next day, the salad jars are ready.
I only did half of them in jars, probably gonna make a soup with the other half!
