Choco banana walnut cake...
3 large ripe bananas..
1/3 cup (80ml) sour cream/ plain yoghurt full fat at room temp.
1.5 tsp vanilla extract..
2 large eggs at room temp..
Blend all these in bowl of food processor till combined..Add eggs one by one and process till smooth..
Now in a separate bowl of stand mixer,sift these dry ingredients :
2 cups cake flour or plain all purpose flour.
3/4 tsp baking powder.
1tspn baking soda.
1/2 tsp salt.
1/4 tsp ground cinnamon (optional ).
1 cup granulated white sugar..
To these sifted dry ingredients add 10tbspn (140 grams) unsalted butter at room temp..
Add half of the banana mixture and beat on low speed until dry ingredients are moistened..then increase the speed and beat the batter for exact 1.5 minutes..
Add the remaining banana mixture in two addition beating well after each addition.Add walnuts and choco chips at this stage..
Pour the batter into the pan and bake in a pre heated oven for 40 to 45 min or until a tooth pick inserted comes out dry..
Cream cheese frosting :
Cream cheese 3 cups (680 grams ) cold..
1 stick 114 grams of unsalted butter at room temperature.
2 cups of icing sugar sifted..
2 tspn vanilla essence..
1 tspn banana essence..
Beat the butter separately till creamy smooth and set aside in a bowl.
Beat the cream cheese till soft , donot over whip at high speed
Add the butter into cream cheese and mix till smooth..Add icing sugar and mix until blended..
Add the essence ( vanilla and banana ) and combine well.
This icing can be used immediately or cab be refrigerated for upto a week..It serves 9 inch cake or 24 cupcakes..
Note : the main point for velevty texture of the cake is beating the batter for 1.5 mintues exactlt..other wise it will turn out dense...or can collapse in case of over beating..
