I have long wanted to try to cook one recipe, but didn't have time. Finally this weekend we managed to find the opportunity and free time with my wife @dolly-k.
So, to prepare the dish we need:
- chicken fillet-1 kg;
- two large bulbs of onions;
- spinach-250 gr.;
- mozzarella cheese for baking-250 gr;
- sunflower oil - 2 tbsp;
- sun-dried tomatoes (optional).
Beats chicken as thinly as possible, of course, using a plastic bag, in order to avoid unnecessary trouble to bring the kitchen in order. Beat off thinly, but make sure that there were no gaps in the fillet, otherwise the roll will look like a freak. Cut the onion into half rings, add in a small amount of salt, pepper, paprika (optional) and fry in a pan on medium heat with the addition of sunflower oil (2 tbsp) for 10 minutes, until Golden brown. Add to a pan of well-washed spinach leaves and mix thoroughly. Remove the pan from the fire.
Lay out on the working surface of the kitchen food film, foil on top of it for baking. Spread on a foil at the lower edge of the chicken. Then, on the fillet spread fried spinach with onions and pre-soaked in water for 20 minutes, dried tomatoes. On top lay sliced cheese for baking.
Now the most important moment! Carefully and slowly, turn the whole composition into a neat roll, so that food film or foil were not included in the spiral roll. Remove the film and send our roll in foil in pre-heated to 200 degrees oven for 40 minutes.
Well, actually the whole cooking process. The result fully met expectations. For forty minutes the chicken is wonderfully cooked and soaked filling. That is why I do not recommend salting the chicken fillet separately, given the fact that the mozzarella cheese itself is quite salty ingredient. I hasten to boast: the roll turned out to be quite balanced in consistency and moderately juicy. By itself, the roll is a finished dish and can be served without an additional side dish.
Given that mozzarella is not the most caloric cheese, an average of 280 calories per 100 grams., the dish as a whole can be classified as dietary, high in protein and medium in carbohydrates. About the benefits spinach you better will reveal Popeye Sailor, and my boys burst meatloaf for both cheeks!!!
