If you've never tasted a homemade marshmallow YOU ARE MISSING OUT!
Marshmallows are pretty tasty (even if they're store bought), but I'm telling you a homemade marshmallow is the ultimate! It's soft, moist (yeah I said moist...lol), fresh, tasty and oh so decadent!
The best thing about homemade marshmallows is that they're pretty easy to make if you have the right tools.
This is the recipe I use (It's a Ina Garten recipe):
3 packages unflavored gelatin
1 cup light corn syrup
1/4 teaspoon kosher salt
1 1/2 cups granulated sugar
1 tablespoon pure vanilla extract (I use vanilla bean paste)
Confectioners' sugar. This helps it from sticking to everything!
First step is to mix the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment. I have a KitchenAid which I love! Let it sit while you prepare the syrup.
Mix the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan on the stove top and cook over medium heat until the sugar dissolves. Increase the heat to high and cook until the syrup mixture reaches 240 degrees on a candy thermometer. Once it's heated to temperature remove it from the heat.
Now that you have the syrup, put the mixer on a low speed, and slowly pour the sugar syrup into the dissolved gelatin. Now it's time to turn the mixer to a high speed and whip it until the mixture is very thick, about 15 minutes (this is when the stand mixer really comes handy). Add the vanilla and mix thoroughly. I like to use a high quality vanilla bean paste.
Grab your sieve, and generously dust an 8 by 12-inch in a baking dish with confectioners' sugar. Take the marshmallow mixture and pour it into the pan, smooth the top, and dust with more confectioners' sugar. I usually cut up some dried fruit or nuts and put some on the top before it sits. Allow to stand uncovered overnight until it dries out.
Once it's sit for 24 hours, the marshmallows are ready to turnout onto a board and cut them in squares, or if you decide to put them in a muffin tin like I did, you don't have to worry about cutting them. I like to give them one more dust of confectioners' sugar.
