My Sunday morning started with a strong coffee and a craving for a delicious lemon dessert! So I made this lemon cheesecake in a glass!
If you love lemon flavor, this is a delightfull, sweet, citrusy cheesecake recipe for summer nights and days!!
A smoothy, super refreshing , with a sensational taste dessert, that can be made in minutes, is the perfect treat for summertime heat!
This no-bake and mousse-like cheesecake has a cookie base and on top has the most wonderful lemon sauce, you have ever taste!❤️ These little sunny lemon cheesecake glasses can steal your heart!
ingredients:
-600 g cream cheese
-1 cup sugar
-1 package biscuits (digestive without sugar)
-6 tablespoons butter (margarine-melted)
-lemon juice
-lemon zest (optional)
for lemon sauce
-lemon juice (about 6 lemons)
-1 cup sugar
-1 tablespoon butter (margarine)
-1 tablespoon cornflour
method:
-pulse biscuits in a food processor, until finely chopped
-add melted butter and stir
-transfer the mixture into glasses
-cool in the fridge
-combine cream cheese with sugar and lemon juice and stir, until smooth
-add the cream into the glasses and chill
-for the lemon sauce combine lemon juice, sugar and cornflour in a saucepan over low heat
-cook, until mixture thickens
-add butter and stir well
-let cool
-pour sauce over cheesecake and chill in the fridge
-serve cheesecake with slices of lemon and biscuits or with whipped cream

PS. Έχεις δίκιο που ρωτάς..Δεν έγραψα γιατί πάει αναλόγως με τις γεύσεις του καθενός! Μπορείς και χωρίς καθόλου χυμό λεμονιού στην κρέμα. Εγώ έβαλα χυμό από ένα λεμόνι.
Και στην σάλτσα λεμονιού (γράφω 6) έβαλα ένα παραπάνω, γιατί μου αρέσουν οι όξινες γεύσεις(στην σάλτσα δοκίμαζα τόσο πολύ, που κατέληξα να μην μου φτάσει για τα δυο ποτηράκια και έτσι έμειναν μόνο με την κρέμα!).
Προτείνω λοιπόν να δοκιμάζεις πριν το τελειοποιήσεις! Ελπίζω να το ευχαριστηθείς, όσο και εγώ!
