I am shifting places (again) this coming Saturday and I was feeling sad yesterday, about moving again.
Will share about shifting places here in Singapore in my future posts.
So, going back, last night I had dinner at this nearby hawker at my current place in Jalan Bukit Merah.
I was hoping the uncle who sells laksa is still open.
Coming near his shop he even greeted me with a smile.
Then I asked if he still has laksa and he confirmed.
"I'll take one, uncle. Eating here.", I asked and went on to sit down and put my things aside.
It didn't take uncle more than 10 minutes to prepare my order, and so here it is:
Based on my years of devouring this lovely comfort food, the coconut milk gives it the dictinct taste that separates it from Penang Laksa and the Assam Laksa.
The local version is the closest to my heart. The variety of taste in one bowl will amaze any first timer.
And how I love how the cockles give it a fresh hint of the seafood saltiness.!
I added some spring onions and toasted crispy onions too! Yum!!!
Uncle makes a simple version of the Singapore laksa by putting together slices of fish cake, mung bean sprout, fried tofu, cockles on big rice noodles. Pouring in the hot laksa soup and he topping it it all up with dried coriander.
This is actually the only dish where I appreciate coriander.
