@cj.sound and I have just come back from a little road trip hence our inactivity but we have so many new and exciting things coming up for you all! We're putting together a little something special for you guys to see our travels and can't wait to show it to you! I get asked this question a lot which honestly makes me question why people can't think beyond the eggs and bacon for breakfast. Yes we do have a lot of smoothies and chia bowls because not only are they super easy, they're raw and packed full of nutrients to fuel our body. HOWEVER that doesn't mean we don't know how to indulge in a hot breakfast when we want one!
As a typical Melbournian, one of my favourite things to do is to go out and have brunch at different cafes. My ultimate favourite dish to order was Baked Eggs. Honestly, if it was on a menu I'd order it! I just loved dipping my bread in the tomato sauce base and normally had chorizo, eggs and melted cheese on top as well. As you all know by now, my favourite thing to do is to recreate non-vegan dishes and make them vegan without compromising on any taste or flavour. The only thing that came in my way with this dish was the egg component. We've pretty much nailed the vegan scrambled eggs, omelettes etc but the poached and boiled egg is still yet within our reach and I refused to put scrambled eggs in a dish that called for baked. And then it came to me... who even needs the egg? One of my favourite cafes made theirs with grilled eggplant, cannellini beans, baked eggs and cheese that tasted amazing, and my other did theirs with spinach and chorizo...all I had to do was fuse the two, get rid of the eggs and voila! A hearty comforting vegan breakfast!
My final creation was grilled eggplant, vegan sausages, spinach and onion in a herbed tomato sauce with melted vegan mozzarella on top served with toasted bread. I completely forgot to add my cannellini beans in but the dish was everything you could have hoped for! So full of flavour, hearty and comforting! The only thing missing from this was a side of hash browns (because potatoes are life). Honestly, who needs eggs?

That looks really tasty @thetinykitchen. I am not vegan myself but am always curious to see vegan recipes and creations because you often have to push the bounds of creative thinking... which i love in the kitchen. You should give a go to my new on going #whatscookingchallenge
I came here to express the same sentiment (minus a sweet cooking challenge invite); I love looking at random ingredients and using them to build a new twist on an established concept. My mom was floored to discover that I had created a type of lasagna that my sister would eat, but anything made from cheeseburger ingredients is rarely a tough sell to her. I used greens rather than noodles, made a sauce out of burger condiments, pickles, onions, tomatoes, and sandwich cheese...great things can come from a slight change in perspective!

My curiosity with vegan foods and pushing the boundaries of creative thinking is what turned me vegan in the first place! haha. I definitely love a challenge and doing things that others would think impossible. I'll definitely have to check it out! Thanks for letting me know :)
Love it! I hear you about the mentioned breakfast from the before times ;) Australia probably has some great vegan alternative foods nowadays... wanna ship some down to me in Bali? ;) Those vegan sausages are calling my name!
Hahaha shhh let's not speak about the before times haha. Australia does have heaps of alternatives which I am sooo thankful for! I'm sure the vegan goodies will make it to Bali because there are so many of us there anyway haha. I can imagine your diet would be much more healthy and wholesome than ours though!

This looks so freaking yummy @thetinykitchen. I eat eggs for breakfast almost everyday because I prefer savory foods instead of sweets (oatmeal, fruit, smoothies, cereal). Sometimes I make a simple potato soup and a kind of corn tortilla called "Arepa", and I've also tried simple hash browns (grated potato with salt and pepper on a nonstick pan) and they both take super looong. So, I'm always stuck with an egg breakfast. I love the eggplant idea and I want to try it. So, I wanted to ask you, since I live in a country that has no vegan options for cheese or sausage, or that yeast that substitutes cheese, not even nuts are available. Do you think you could come up with a third-world compatible version of this? I'm thinking maybe capers for a salty taste and I would like to substitute real sausages, but not sure how....maybe anchovies (but you don't eat meat). The problem is basically the cheese, which I'm trying to avoid.
