I made this Thai curry soup and it was fast and easy. You add coconut milk, curry paste, and vegetables to any kind of noodles. Best lunch in 2018 so far. The best part is , it's vegan without skimping on flavor. There can be so many possibilities and combinations for making this. Let me know what you choose to put in yours.
I used one can of coconut milk, one jar of curry paste, mushrooms, scallions, carrots, onion, garlic, baby corn, and Banh Pho noodles.
