If I told you that you can not tell the difference just by looking at fresh shredded nacho cheese vs freezedried completely moisture free shredded nacho cheese. Below is fresh shredded cheese on the trays that go into the machine. The trays in this photo have 6 1/2 cups of cheese on each one.
Next is a photo of the same trays of cheese, only the cheese is dry. Visually it looks just as fresh. However, instead of being nice and soft, it is hard and crunchy. Tastes just like fresh cheese with the texture of a soft flaky cheese stick. From the 6 1/2 cups of fresh cheese, I ended up with 5 1/4 cups of dried cheese. Must note the amount of time the machine took to complete a cycle ofof romance fresh to dry -26 hours minus 9 hours of freezing first by the machine, then 17 hours of drying cycle.
The first photo just shows you my choice of storing my final product. A good glass jar for using up this month -short term storage - for my recipe experimenting (want to know exactly what to do best). And mylar bags with an oxygen absorber in each one - for up to 25 years of storage.

I am new to this photo stuff/computer/steemit/blogging period. I am determined to master it though. got to do a bit more reading on it. But the freezedrying is going better than the photos :) I will keep trying. It's all fun.
