Ingredients
- 0.3 bottles of King Coconut Water
- 1 Kg (2.2 lbs) of Sugar ( To make into a caramelized sugar)
- 25g ( 1 oz) of Yeast
- 3" Piece of Cinnamon
- 8 Cloves
- 8 Cardamoms
- 2 Wine Glasses of Lemon Juice
Method
Crush the cinnamon, cloves and cardamoms slightly and mix with Yeast and Lime Juice ( dissolve in a little king coconut water ) in an earthen -ware vessel. Cover the vessel and leave to ferment for 10 days. Then strain and add the sugar caramel to it and leave to settle for 3 days . After the third day, tube strain the King Coconut Wine and bottle them.
How to caramelize the sugar (Sugar Caramel)
Heat the sugar in a pan with 1 ½ cups of water and bring to a boil. Do not stir. When the mixture becomes thick and syrupy remove from fire. Let it cool a bit before mixing it with the wine but do not allow the mixture to get hard
