Good Morning My Fruits and Veggie Foodies!
I hope you all had a great weekend! Mr. Bird and I spent a lot of time outside, relaxing on the lanai.
We’re getting ready to take another road trip my friends! Today was the day to prepare!
I popped out of bed this morning ready to hit the kitchen and create something fun for Fruits and Veggies Monday! Thanks to @plantstoplanks and @lenasveganliving we have this great weekly get together. This week fellow foodie @lizelle will be our guest judge and based upon her wisdom and creative genius I know she’ll do a wonderful job! I want to give a big thanks to all three, without them we wouldn’t be celebrating how fabulous fruits and veggies are in our daily lives.
Mr. B and I were sad to see our family leave this weekend so I think I’ll make a little Monday surprise for him. I know he loves Blueberries so I’ll showcase these little gems today. We all know they’re packed with anti-oxidants, something which will help regenerate two tired birds!
Crispy Blueberry Pecan Tart
All I needed
- Gluten Free Oats (3/4 cup)
- Almond Flour (1 cup)
- Maple Syrup (4 tbsp.)
- Baking Powder (1 tsp)
- Sea Salt (dash)
- Coconut Oil (5 tbsp.)
- Pecans (2 tbsp.)
- Fresh Blueberries (3/4 cup)
- Tapioca Starch (2 tsp)
We begin with…
Blueberries. You know blueberries are very low in calories and one of the most nutrient dense berries! They're high in vitamin C, K and fiber! Studies have shown blueberries lower bad cholesterol, may reduce heart disease and the incidence of cancer Not to mention, they taste so good! Be sure to wash them well! I mixed the fresh Blueberries with 1 tbsp. of Maple syrup and the Tapioca Starch in a small bowl. Set aside for a sec!
You’ll love this…
crispy crust we’re making. Mix the Oats, Flour, Maple syrup, Baking Powder, Sea Salt and Coconut Oil together in another bowl.
Set aside…
½ cup of the oatmeal mixture and press the balance into your favorite tart or baking dish. Spoon the blueberry mixture into the crust.
Don’t forget…
to chop the pecans! This is my favorite addition, this topping is amazing with blueberries. You’ll love it! Add the pecans to your reserved mixture and crumble on top of the blueberries. I promise you’ll be tempted to eat this now…but hold on!
Into the…
oven at 350 for 40 minutes. I covered the tart after 20 minutes; I didn’t want the topping to burn. Remove and let it cool…as long as you can! Golden brown and bubbly!

I tried that Keto brisket pocket except I used chicken instead...it was DELISH! My family loves it and wants me to make it again! Thanks so much for the recipe! I mixed barbecue sauce, honey and garlic together for the sauce!! Yum! 😋
Oh my goodness that looks soooo tasty!! I just love those pockets, think of the ingredients you can include. Chicken with a honey barbeque sauce, yikes I'm going to have to try that one! I never used to like blueberries, but not I enjoy them and have them often but have never had a blueberry pie like that and it looks so good I must say

Well you've done it again. Got my my tummy growling first thing upon catching up on the FAVM posts I haven't gotten to yet. Of course it is right when I'm having a cup of coffee and would love to have a piece of this! So delicious, and I can just imagine that berry boost after enjoying some!

You always get my mouth salivating Mrs. Bird, but especially this time!!! For some reason I've been eating blueberries more than usual and I even made porridge yesterday which I am going to post later, but that is nothing compare to your amazing crisp that I can only dream about at this moment. I used to have a neighbour yonks ago, who also loved baking and we used to share our treats and recipes! But now I have a friend I can chat to and enjoy virtual treats at any time across the waters :)

One needs a small mortgage to afford imported blue berries in Thailand. But I have 3 mulberry trees full of green fruit in thebgarden so a local, adapted mulberry version looks to be on my radar.... soon. 😋

This looks wonderful. We just got our first few blueberries today--still not quite sweet enough to pick. More are on their way from our side garden.. This looks like a lovely way to use them.

You know, there are certain desserts which take me back to childhood and baking with my grandmother. This is one such recipe. Although she would use blackberries which we picked on some obscure piece of land, I always loved these oatmeal crisps. (Her's however were packed with processed sugars, lol) I hope you'll make this and let me know of any changes you make! Thanks @toddfoster!

Give it a go girl! I would love to hear what you think! Frozen berries will work, just make sure you thaw them and make sure you aren't adding any additional moisture to the berries :) Gluten free works in my house!
