Fruits and Veggies Monday Week #68 | The Bird’s Christmas Cranberry Cheesecake

Happy Monday my Fruits and Veggie foodies!


My goodness I have been away for a few weeks, so busy making Christmas gifts and goodies but today I wanted to share a little Christmas Cheer with my friends of the Fruits and Veggies Community!


Thank you dear Lena for hosting this wonderful weekly gathering! For now 68 weeks you have hosted the Fruits and Veggies Monday contest, we are all so grateful.


As I mentioned I have busy in the kitchen making healthy goodies to give to friends and neighbors. I love making healthy sweets, my friends are always so surprised! Today I am making the final treat using Cranberries! They're so good for you, I try to keep some in the freezer. They're great in salads, breads, juices and smoothies! Tomorrow I begin making up the plates of healthy candies and confections.


I’d better get started! Christmas is just around the corner!

The Bird’s Christmas Cranberry Cheesecake


Cranberry Topping

  • Fresh Cranberries (1 1/2 cups)
  • Fresh Orange Juice (1/3 cup)
  • Filtered water) 1/3 cup)
  • Organic Maple Syrup (1/4 cup)
  • Cinnamon (1 tsp)
  • Allspice (1/4 tsp)

I washed and drained the cranberries and juiced the orange. Luckily I was just making my morning juice so juicing this orange was simple! Place all of the ingredients in a saucepan and cook over medium heat. Stir frequently, cooking for about 15 minutes. Set aside to cool!

Cheesecake Crust

  • Walnuts (1/2 cup)
  • Hazelnuts (1/2 cup)
  • Organic Maple Syrup (1 tbsp.)
  • Coconut Oil (2 tbsp.)
  • Medjool Dates (qty 6)
  • Cinnamon (1 tsp)

Time to pull out good old Walter, my food processor. Trusty appliance he is, 40 years old this Christmas and still kickin! Pulse the walnuts and hazelnuts a bit and then add the balance of the crust ingredients. Pulse away until everything forms a ball. I used my spring form pan for this but a parchment lined baking dish works too! Press the mixture firmly into your pan of choice!

Cheesy cake filling!

  • Raw Cashews (soaked overnight/drained) (2 cups)
  • Coconut Oil (1/4 cup)
  • Full fat Coconut Milk (1/2 cup)
  • Organic Maple Syrup (1/3 cup)
  • Fresh Lemon Juice (2 tbsp.)
  • Vanilla (1 tbsp.)

Don’t put away that food processor! Pour the cashews in and process along with all of the ingredients until everything is as smooth as silk! Creamy you want! Pour the filling over the crust. You can place this in the freezer until the cranberries cool.

Now top with the cranberries, Place in the freezer for about an hour!

Voila! Christmas Cheer!

How very Merry of you my Dear Mrs. Bird! This is just what we need today with all the other goodies. You have always delicious surprise for us but this time you made it extra special. lol, actually he hasn't seen it yet! He was working on a project so he was busy. I'll be sure to share it, I have to give it to him slowly as it is one of his favorite desserts....Thank you my good friend, you are too kind! Do you have special plans for Christmas? I'm sure the little guys will be even more fun this year! They are so darling :) I'm looking forward to serious baby snuggles although he is crawling a bit now so he'll want to move more than snuggle, but full of lots of laughing and smiling, so special! Merry Christmas!!

As they grow older, we get less and less snuggles, lol. But you still have at least another year, so enjoy while it lasts! Our boys are all over the place, too busy for snuggles, but they were friendly with Santa, since he promised them new trucks. Like they don't have enough already, lol.

I know, I feel like I'm a little behind on commenting! I had a wonderfully busy weekend hanging out with some of my favorite friends and little munchkins. Oh it is a glorious time to be an auntie (both by blood and friendship)! I'm sure you can relate to the joy of time spent with the little ones. 😊

I made my traditional holiday treat (blueberry energy balls) to share with co-workers and my clients this week for I think the third year running. Other than that I feel like I don't really have any typical recipes that I always make. Since @dksart and I go to his parents on Christmas Eve and spend the night, then head over to my family's celebration on Christmas day I actually don't cook as much for this holiday. My sister is going to make a nice vegan soup so I have something to eat, and I'll bring along @thekitchenfairy's yummy vegan nog, fresh bread, hummus, and salad fixings to the meal. We used to go bigger on the holiday meal, but now I think we just enjoy the time spent together and the food is just extra. I hope the Bird family has some nice plans!

You are right, wonderful time spent with family is the best part. We'll all be together with my daughter in Denver. This year it's a homespun holiday...so I have been making little gifts, it's been fun. We'll all gather a few days before Christmas so we can bake :) I love making their favorite foods...I'm sure chocolate will be on the scene. Looking forward to valuable family time...and of course baby snuggles although he is figured out how to move around so he is already very busy! So fun. We'll have veggie soup as well, haven't conquered the altitude thing to made good bread yet, may have to stick with something unleavened,lol. Merry Christmas!!

Sounds like a wonderful time! I'm still figuring out a few little gifts to make for some of the guest's at the Christmas Eve celebration. This weekend should be low-key, so I'll finish up the last things then if not before. I'm sure you'll bake up plenty of goodies. My older sister has become the baking auntie, so she and our niece made cookies for Santa already. Love seeing new traditions blossom as she gets older!

It seems that you're a busy bird nowadays :) When I used to live back home I was also baking, cooking and doing preparations weeks before Christmas. Nowadays, we travel back home for Christmas usually just 1 or 2 days in advance so there is nothing I can do. All is done by my mom and I'm eternally grateful for that.

40 years?! WOW! My mom likes to say that the quality of the electronics in the past was much higher. Your food processor is a good example of that.

I never used cranberries for any desserts, only for cranberry sauce. I can imagine it tastes really good.. and hey, what doesn't take good with cashew cheesecake, right? :)

hehe, you are so cute, thank you @cicisaja! Actually I don't know how long it stays in shape because it doesn't last very long! I usually remove it from the freezer about 30 minutes before serving. I would love to hear if you try it! :)

Well.. because I'mnot vegan and it is not easy to find cranberry and cashew around, I'll think about another fruits and nuts to use later. If This kind of dessert is serving for me.. 😊😅 you'll see the empty plate within 5 minutes 😆 I don't mind if you consider me as impolite one 😂
