Fruits and Veggies Monday- Vegan colored raw cheesecake

Vegan colored raw cheesecake

Ingredients for a cake bottom:
200g of mixed nuts: walnuts, hazelnuts, almonds, cashews, macadamia
100g of dates
1 teaspoon of vanilla extract
1 tablespoon of coconut butter
1/4 teaspoon of salt

Ingredients for the creams:
400g of cashews
2 lemons
8 tablespoons of agave syrup
1dl of almond milk
100g of coconut butter
500g of coconut cream
20g of raw cacao powder
150g of red berries: raspberries, cranberries
1 vanilla pod
150g of blueberries
5 ml of lavender syrup

Ingredients for a glaze and decoration:
70g of raw dark chocolate
10g of coconut butter
1 tablespoon of agave syrup
1 teaspoon of raw cacao powder
2-3 tablespoons of water
100g of forest berries: cranberries, raspberries, blackberries, blueberries, black and red currants

Put 400g of cashews in a bowl, cover it with 3- 4dl of cold water and leave it overnight.

Put 100g of dates in a blender and roughly blend it. Add 200g of mixed nuts (I used walnuts, hazelnuts, almonds, cashews and macadamia) into a blender and blend it again for a minute. Add a teaspoon of vanilla extract, a tablespoon of melted coconut butter and a pinch of salt and blend it really quickly, just to get them well mixed.

Put a nut mixture on the bottom of a cake model and press it down with a spoon or a glass. I used a model in diameter of 30cm. Put your cake bottom in a freezer for 15 minutes.

Strain cashews and blend it. Put them in four separate bowls, 100g each. Add juice of half of a lemon, 25g of melted coconut butter, 2 tablespoons of agave syrup and 25 milliliters of almond milk in each bowel and mix it.

Chocolate cream
Take one of the bowels and pour the mixture into the blender. Add 100g of coconut cream and 20g of raw cacao powder and blend it.
Take your cake bottom and pour chocolate cream on it. Put it in a freezer for 15-20 minutes.

Forest berries cream
Put 150g of red forest berries in a blender. I used frozen raspberries and cranberries. Blend it and filter it trough a thick strainer. Pour it back into the blender, add one bowel of cashew mixture and 100g of coconut cream and blend it.
Pour the cream on your slightly frozen cake and put it in a freezer for another 15-20 minutes.

Vanilla cream
Take another bowel and put the cashew mixture into a blender. Add 200g of coconut cream and a content of one vanilla pod. Blend it and pour vanilla cream as another layer on your cheesy cake. Put it back in to the freezer for 15- 20minutes.

Blueberry- lavender cream
Put 150g of blueberries in a blender and blend it. Filter it trough a thick strainer. Pour it back into the blender, add the last bowel of cashew mixture, 5 ml of lavender syrup and 100g of coconut cream and blend it. Pour it on the top of your cake. Cover your cake and put it in a refrigerator overnight.

The next day take the cake out of a refrigerator. Rinse a kitchen cloth in a hot water and wrap it around the cake model just for a few seconds that the edges melts.
In a water bath melt 70g of raw dark chocolate and 10g of coconut butter then add 1 teaspoon of raw cacao powder, 2-3 tablespoons of water and 1 tablespoon of agave syrup and mix it until it gets smooth. Pour it on one half of the cake and put it in a freezer for 10- 15 minutes. When the chocolate is solid, take it out of the freezer and decorate it with 100g of forest berries (cranberries, raspberries, blackberries, blueberries, black and red currants).

I wanted to use fresh berries and some chocolate that was left from the last time I was making cake, but even without chocolate this vegan cheesecake really tastes amazing. 🍰🙂
