The greatness of this recipe is simply that it combines the two best things in world: bread and potato. Don’t try to convince me otherwise, it’s the truth!
So, fresh bread straight from the oven, anyone? I know I’m up for that anytime. This bread recipe I’m going to share with you isn’t a typical one. I felt that today is a great time to share with you another Finnish recipe which is really close to my heart. Believe me, this bread is!
If you have leftover mashed potatoes to get rid of, don’t throw them away! You want to use them for this quick and easy (my favorite words when it comes to cooking) bread, and believe me, you won’t regret your decision. Usually when I make mashed potatoes, I make too much so that I can bake these goodies. Feel free to double the recipe, or even quadruple like I did the past weekend... 😄
Finnish Potato Bread • the recipe makes 7
Ingredients:
3 dl cold mashed potatoes
2.5 dl all-purpose flour
0.75 dl water
2 tbsp vegetable oil
1 tsp salt
Method:
Mix all the ingredients in a bowl. The dough should be quite thick and a little sticky. Use floured hands to make round flat breads onto a baking tray. Spike them a couple of times with a wet fork. Bake at 250 °C (= 480 °F) for 10-15 minutes (as long as you get some brown spots).
Enjoy with (vegan) butter or cheese!

I use spices (depending on the mood). this time: sweet pepper, garlic, coriander, turmeric, fenugreek, dill, black pepper, ginger :)
Such a variety of spices, now I'm really intrigued to try adding spices to the bread myself as well! :)

Oh my, looks yummy! I didn't expect her to try the recipe right away, how did they turn out with the gluten free flour?
She said “I had all the stuff to make them.” You left perfect instructions, they were great! I used them as my dinner bread but the last 2 pieces were also a dessert.

Oh my God- this is perfect (yet again) ! Although, I don’t think I ever have left over, unused, mashed potatoes around… they go fast around here. I definitely have to make these flat breads. I’m going to try them with GF flour, I’ll let you know how they turn out 😉.

Oh they turned out perfect! Although, I had to bake mine much longer to get the browning but they tasted every bit as delicious as I thought they would. FYI using gluten free flour worked perfectly as well. Thank you so much for the inspiration my friend!

What a delicious and simple recipe @jasmink! Have you tried varying it slightly? Say sweet potato instead of potato?
Actually the only way I've modified this recipe is using some seasoning. This last time I made them, I added a bit of nutmeg into a part of the dough. However, I'm not sure if I like it, so I didn't want to mention it in the recipe. But oh why haven't I tried to use e.g. sweet potato instead of potato, I think I could be delicious! Thanks for stopping by and giving me new yummy ideas @buckaroo! :)

Very interesting recipe @jasmink My favorite kind of bread is Challah. My wife makes a version with lots of honey. It is like cake :)
I had to google what Challah is, I've never heard of it! Everyday you learn something new. :) Now when I'm looking the photos and reading some recipes, it resembles something my grandmother used to bake frequently, but with sugar instead of honey. We just call it differently (well, it's not exactly the same thing either), but it's really delicious! :)
