Rice and Beans with a Secret Ingredient 🍴 | Easy Recipe

Happy Monday, my foodie friends!

The best thing about rice and beans is that there are so many ways to prepare the dish. So many different ingredients to add, and always the final product is delicious! Today, I want to show you one way of making rice and beans, and perhaps give you some new ideas regarding the dish. Adding roasted peanuts for a little crunch and curry ketchup for a funky twist, and oh my goodness, you'll fall in love!

Rice and Beans - the Jasmin way

(just because it’s cool to include my name in the recipe)

Ingredients:

3 dl rice (dry)
1 can kidney beans
peanuts (as much as you wish)
10-12 cubes frozen spinach
1 tbsp sriracha
1 tsp cajun seasoning
salt and pepper to taste
curry ketchup

Method:

Cook the rice according to the package instructions. Roast the peanuts on a dry frying pan. Once they’re ready, put them aside and melt the frozen spinach on the pan. Drain and rinse the kidney beans. Mix everything together, season and enjoy! 😋


Adding the curry ketchup actually wasn’t my intention in the first place, but once I had a plateful of rice and beans in front of me, I was thinking that the taste is a bit bland. So, I went to search for something I could add to give a bit more taste, and curry ketchup was what I found. Luckily I did, it goes super well with this dish!

Yummy this looks so nice and i love that yout put you name the jasmine way:D where fid you find curry ketchup?The only place i found some was in Belgium when i used to live there.

Thanks @drawmeaship! :) I'm not sure if curry ketchup is available all around the world, but I'd check large, well equipped supermarkets. You can also make your own curry ketchup from regular ketchup. There a plenty of recipes online, but they can be a bit complex. I'd just mix regular ketchup with curry powder, paprika and a pinch of sugar (if your ketchup is unsweetened), until it tastes nice! :)

Bring on the peanuts!! I love that addition! You just reminded me it is about time to make my peanut chili again, too. Another great entry Jasmin!

It's like a whole new dish with peanuts, I really like it. Have you posted a recipe for that peanut chili? If you have I've totally missed it, but it already sounds delicious, and I need the recipe!

Awesome! The recipe definitely sounds better with your name in it. I like the siracha touch too. Anything spicy and I’m all over it. Your beans and rice recipe is quite a looker too. Must be those pretty purple kidney beans mixed with the deep green spinach 😋yum!

You are one of the nicest people I know on here, @jasmink. My compliments to you fail in comparison. But at least we can agree on siracha being the star of any show. Haha… I used to put that stuff on EVERYTHING… it was kind of ridiculous. 🤦🏼‍♀️

Then we were doing ridiculous things together, since at one point I was obsessed with sriracha as well, haha!

uhmm.. we're always add some fried peanuts on our fried rice @jasmink, because we have not canned bean anytime of the years, never tried using the spinach (well... because my FIL doesn't really like spinach) but we're doing good with water spinach. this is so simple and creative too. fried rice is my favourite, now I know what to prepare if a vegan come to my house :D.. thanks and good luck with the competition.

yes @jasmink.. it's really tasty, that's why many dishes in my country use peanuts ,roasted, fried, fresh even with its skin in the "sayur asam sunda" or sundanese veggies sour stew. quick, easy and tasty.. what a perfect combination of food we need to have everyday
