Don't beets just make everything so beautiful? I think that's part of the reason why I use them so much, but they are quite delicious, too. ;)
Smoothies, salads, soups... Beets definitely make everything nice! I used it once to make a pink cream for a cake and it didn't ruin the taste at all :)
