There's so many wonderful vegetables in the world to enjoy! A veggie day is a perfect way to start trying to incorporate more into your diet. For a while when I was trying to expand my horizons I had a goal to try either one new vegetable a week or one new recipe. I really enjoyed it and found a lot of new favorites that way. Some of the squashes are pretty funny-looking! The flesh of the butternut squash is quite delicious. Soft and just a little bit sweet.
