What you're saying is true, the same diet don't work with everybody. I think the best approach is to balance the diet, of course you can remove the carbs completely, but I think that it's better have some days without it at all and then some days with it . Eliminating carbs has a quicker effect but it might drive to gain it all over if you can't maintain the diet.

Balance is the key. In my humble opinion. By the way congrats in your path, don't forget to exercise a little to improve health and maintain muscle. Good luck!
