The four-handed symbolizes the philosophy of "the four paths to happiness". Body fat as a symbol of a big man capable of defeating his enemies. God Ganesha ride a mouse because the mouse symbolizes doubt in the face of a thing, therefore Ganesha tried to block all his difficulties.
Why He headed the elephant
In the book of Shiva Purana is told, once when Goddess Parwati (wife of Lord Shiva) wanted to bathe. Not wanting to be disturbed, he created a boy and named Ganesha. He advised that the child will not allow anyone to enter his house while the goddess Parwati bathing and can only carry out the orders of Goddess Parwati only. The command was executed Ganesha well.
Once the god Shiva was about to enter his house, but he could not enter because of being intercepted by a small child who guarded his house. Ganesha forbade him because he carried out the orders of Goddess Parvati. Lord Shiva explained that he was the husband of the goddess Parwati and the guarded house ganesha was her home as well. But Ganesha refused to listen to the orders of Lord Shiva, according to his mother's command not to hear anyone's orders.
Eventually God Shiva runs out of his patience and fights with Ganesha. The fight was so fierce that Lord Shiva finally used his Trisulanya and cut off Ganesha's head.
When Parvati's goddess finished bathing, she found her son was dead. She is angry with her husband and demands that her son be revived. Lord Shiva was conscious of his actions and he agreed to his wife's plea.
At the suggestion of Lord Brahma, he sent his abbot, Gana, to chop off any creature's head which he first saw facing north. When it came down to the world, Gana found an elephant with its head facing north. The head of the elephant was decapitated to replace Ganesha's head.
Eventually Ganesha was revived by Lord Shiva and has since been given the title of the God of salvation. Saving someone before he starts his work, by worshiping him
