We usually pull everything our from the garden in the autumn, or the molerats just eat it. So we store the carrots and leeks in damp sand buckets and in the spring we plant them in a common bed. This bed does not have to be weeded or watered as much, as you're putting large plants in there and the weeds actually just help keep the moisture in. We do mulch on principle, even if it's not critical for this bed. It's a good feeling, knowing a specific bed won't need much attention!
