Thanks for highlighting Sow-Thistles! They are so under-appreciated. I'm with you in hoping that more folks get to know these great plants. I like both the Common Sow-thistle (Sonchus oleraceus) and the Prickly Sow-Thistle (Sonchus asper). I do like them best when they are young and tender, before they send up a central flower-stalk. But I like their flowerbuds, too -- good and meaty to chew!
The Prickly Sow-thistle is great just blanched a bit. But they are sturdy enough for casseroles, too! Here's a link to a video where I use them to make Poached Fish with Prickly Sow-Thistle. But they are good plain, too! :D Enjoy your Sow-Thistles!
