Goodness man, don't you ever sleep? Take a break already LOL , your going to have quite a harvest in a few years. I have a couple of persimmon trees here on the farm, all of the astringent type, and the irony is we hardly ever get a good frosty frost...bummer

I'm just guessing, but not freeze them when they are ripe, then defrost and try them. That's how I would try it.
