My husband's favorite is eggplant parmesan. Just like chicken parm but breaded eggplant instead of chicken.
Another that I like to take eggplant and put through a flour, salt, pepper, onion flake and garlic powder mixture and fry up in cast iron skillet. Then I put either salsa on top or sprinkle with parmesan cheese. both quick and easy.
If you slice super thin (use a mandolin and watch your fingers) you can season the eggplant with whatever you'd like (we use a ranch flavored mixture you would for popcorn) and make chips in oven or deep fryer- good for dipping

Its about my least favorite vegetable. However, I have gotten it to work if first I braise it on a super hot surface.

The bbq was actually the best I ever found, after everything else was done, I cranked the heat and ripped it out in 3 mins. From there, it had a chance. Maybe like a hatch pepper?

It was always my least favorite veggie too, but I've learned to do amazing things with it. Going to attempt a fritter tomorrow for breakfast. Then on to prepping a bed for lettuce and fall spinach! I'm hungering for some fresh greens.
