green asparagus I`d say...I am in Germany and we have the thick white one which is being harvested from end march-may...they watch the hilled up ground for the shoots to just pop their head through the dirt then cut them deep in the dirt-all harvest by hand-very delicious and super healthy...the green shoots simply turn green because they get exposed to the sunlight-the white ones dont..
